Grilled Peach and Bourbon BBQ Chicken

INGREDIENTS:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and black pepper (to taste)

For the Bourbon Peach BBQ Sauce:

  • 1/2 cup bourbon
  • 1 cup peach preserves or jam
  • 1/4 cup ketchup
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 clove garlic, minced
  • 1/2 tsp smoked paprika
  • 1/4 tsp cinnamon (to mimic the toasted sweet notes)

For the Grilled Peaches:

  • 3 fresh peaches, halved and pitted
  • 1 tbsp olive oil

Instructions

  1. Prepare the Chicken:
    Brush the chicken breasts with olive oil and season with salt and black pepper. Set aside.
  1. Make the Bourbon Peach BBQ Sauce:
    In a medium saucepan, combine bourbon, peach preserves, ketchup, apple cider vinegar, Dijon mustard, soy sauce, garlic, smoked paprika, and cinnamon.

    Bring the mixture to a simmer over medium heat and cook for 8–10 minutes, stirring occasionally, until thickened. Set aside.
  1. Grill the Chicken:
    Preheat your grill to medium-high heat. Grill the chicken breasts for 6–7 minutes per side, or until fully cooked (internal temperature reaches 165°F). During the last few minutes of cooking, brush the chicken with the bourbon peach BBQ sauce, letting it caramelize slightly.
  1. Grill the Peaches:
    Brush the peach halves with olive oil. Place them cut side down on the grill and cook for 3–4 minutes, or until they develop grill marks and soften slightly.
  1. Serve:
    Plate the grilled chicken and peaches together. Drizzle with extra bourbon peach BBQ sauce and garnish with fresh herbs like thyme or basil for a summery touch.
